Vegetable Orzo Salad
One of my favorite side dishes! Grilled butternut squash, asparagus, onions and mushrooms tossed with feta cheese, pine nuts, orzo pasta and a lemon-basil oil.
This is a great dish because you can use any kind of vegetables you like, either grilled, baked or broiled, and can be served warm or cold. This made the perfect side dish to our Easter Ham today and is also great for summer BBQ’s and picnics. Enjoy!
