Turkey, Apple and Brie Panini
Quite possibly my all time favorite panini! I love the one from Bountiful Bread (I order the Ham & Brie and substitute Turkey for the Ham) but I also like making this panini myself and experimenting with different types of apples and breads.
Here’s how I make this delicious sandwich:
First I make a cranberry mayo by pulsing dried cranberries and mayo together in a blender or food processor. I like to make a lot and keep the extra in the fridge for future paninis. If you don’t like mayonnaise I think a spicy mustard would be a great substitution. Next I spread a very thin layer of the cranberry mayo on two pieces of bread. I used a fresh French bread for this sandwich but have also used whole grain bread and it was equally delicious. Next I pile on the ingredients: 2-3 slices of roasted turkey, 2-3 slices of Brie cheese and a couple slices of any apple of your choice. In this sandwich I used Granny Smith but I’ve also used Fuji and Braeburn (my favorite). Before I put my sandwich in the pan I smear some butter on both topsides of bread which helps it get nice and toasty. I grill the sandwich covered on medium-low heat 4 to 5 minutes on each side. And voilà! Perfection in the form of a hot, toasty, melty panini!
I don’t know what it is about the combination of turkey, Brie and apples, but I think I could eat this sandwich everyday and never get sick of it. I highly recommend trying this recipe, you won’t be disappointed!
